INGREDIENTS

  • 1 tablespoon olive oil
  • 6 thick pork sausages (or your preferred variety)
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 400 g can chopped tomatoes
  • 400 g can cannellini or butter beans, drained and rinsed
  • 1 cup chicken or vegetable stock
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme or mixed herbs
  • Salt and pepper to taste
  • A dash of Worcestershire sauce (optional)
  • Fresh parsley, chopped (to garnish)

INSTRUCTIONS

1. Brown the sausages

In a large, heavy-based casserole pot or Dutch oven, heat the olive oil over medium heat. Add sausages and brown on all sides. Remove and set aside.

2. Sauté the vegetables

In the same pot, add onion, garlic, carrot, and celery. Sauté until softened, about 5-6 minutes.

3. Build the sauce

Stir in tomato paste, chopped tomatoes, stock, paprika, herbs, Worcestershire sauce (if using), salt, and pepper. Bring to a gentle simmer.

4. Add beans and sausages

Return sausages to the pot and stir in the beans. Cover and simmer gently for 25-30 minutes, or until sausages are cooked through and the sauce has thickened.

5. Garnish and serve

Sprinkle with chopped parsley just before serving.
