Warm up with a creamy, hearty pie that's perfect for chilly evenings.

INGREDIENTS
For the filling:
- 2 tablespoons olive oil or butter
- 500 g boneless chicken thigh fillets, diced
- 2 medium leeks, trimmed, washed, and sliced
- 2 garlic cloves, minced
- 1 tablespoon plain flour
- 1 cup chicken stock
- 1/2 cup thickened cream
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- A few sprigs of thyme (optional)
For the topping:
- 1 sheet of puff pastry (or shortcrust, if preferred), thawed
- 1 egg, lightly beaten (for glazing)
INSTRUCTIONS
1. Saute the chicken and leeks
In a large saute pan or deep skillet, heat olive oil or butter over medium heat. Add diced chicken and cook until lightly browned. Add sliced leeks and cook until softened, about 5-6 minutes. Stir in garlic and cook for another minute.
2. Make the creamy base
Sprinkle flour over the chicken and leek mixture and stir well to coat. Slowly pour in the chicken stock while stirring. Let it simmer for 5 minutes until slightly thickened. Add the cream and mustard, then season with salt, pepper, and thyme. Simmer for another 2-3 minutes, then remove from heat.
3. Assemble the pie
Preheat your oven to 200°C (180°C fan-forced). Spoon the filling into a medium pie dish or several individual ramekins. Lay the puff pastry over the top, trim to fit, and press down edges with a fork. Brush with egg wash.
4. Bake until golden
Place in the oven and bake for 25-30 minutes, or until the pastry is puffed and golden brown.
SERVING SUGGESTIONS
Serve warm with a simple green salad, steamed vegetables, or mashed potatoes.
