Classic Homemade Apple Pie

A timeless apple pie with a buttery, flaky crust and warm cinnamon-spiced filling - perfect for family gatherings or weekend baking. 

INGREDIENTS 

For the Pie Crust (makes top & bottom crust) 

  • 2½ cups plain flour
  • 1 tsp salt 
  • 1 tbsp sugar 
  • 225g cold unsalted butter, cubed 
  • 6–8 tbsp ice water 

For the Apple Filling 

  • 6–7 medium apples, peeled and sliced 
  • ¾ cup sugar 
  • 2 tbsp plain flour or cornflour 
  • 1 tsp ground cinnamon 
  • 1 tbsp lemon juice 
  • 1 tbsp butter 

INSTRUCTIONS 

  1. Make the Dough: In a large bowl, combine flour, salt, and sugar. Rub in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing gently until the dough comes together. Divide into two discs, wrap, and chill for at least 30 minutes. 

  1. Prepare the Filling: In another bowl, mix the sliced apples with sugar, flour, cinnamon, and lemon juice. Toss well to evenly coat the fruit. 

  1. Assemble the Pie: Preheat oven to 200°C (180°C fan-forced). Roll out one disc of dough and line up a 9-inch pie dish. Spoon in the apple filling and dot with butter. Roll out the second disc and place over the top or create a lattice design. Seal the edges and cut small slits to allow steam to escape. 

  1. Bake: Place the pie in the oven and bake for 45–55 minutes, or until the crust is golden brown, and the filling is bubbling. Allow to cool for at least 1 hour before slicing and serving. 

BAKING TIPS 

  • Chilling the dough helps create a flaky crust. 
  • Use firm apples such as Granny Smith for a balanced sweet-tart flavour. 
  • Letting the pie rest before cutting helps the filling set properly.
